Thirsty Thursday: Cucumber Watermelon Gin Fizz

Hey, have you guys noticed how CRAZY HOT IT IS OUTSIDE? Almost too hot to hang out in your hard/porch/favorite park… unless you’ve got one of the Cucumber Watermelon Gin Fizzes David made up for us this week! Even if you’re not a gin fan (perhaps you think it tastes like a pine tree… or maybe we’re projecting), you’re gonna dig this.
Ingredients

3 slices of cucumber, about 1/4-inch thick, plus one for garnish

1/2 ounce fresh juice from 1 lime

1/2 ounce simple syrup (see note)

1 1/2 ounces gin (I used St. George Botanivore)

1 cup seedless watermelon

1 to 2 ounces seltzer water
Directions
1. Blend up to 1 cup of seedless watermelon until liquified (This will provide you with more watermelon juice that you will use for one cocktail).
2. In a cocktail shaker, muddle the cucumber slices with the lime juice and simple syrup until the cucumber has mostly dissolved.
Note: To make simple syrup, combine 1 cup water with 1 cup sugar in a small saucepan. Heat over medium heat, stirring constantly, until sugar is dissolved. Cool before using.
3. Fill the cocktail shaker with ice and add the gin and 2 ounces of watermelon juice. Shake well.
4. Pour the cocktail through a strainer into a glass filled with fresh ice. Top with seltzer water and garnish with a cucumber or watermelon slice. Enjoy!
